Ingredients: Raw rice / Idli rice – 1½ cup Grated coconut – ½ cup Sugar – 2 tsp Baking soda – ¼ tsp Salt Steps: Wash rice and soak for 3 hours. Grind rice to a smooth paste adding little water. Take 2 tbsp of the ground rice in a pan and add some water. Turn on the stove. Cook the mixture stirring continuously till it thickens. When it cools down a bit, add this to the ground rice. Add grated coconut and sugar and grind to a smooth paste. Add enough water to make a smooth batter. The consistency should be that of the dosa batter. Cover and keep the batter aside in a warm spot overnight or for 6-8 hours for fermentation. Once the batter is fermented, add baking soda and salt. Mix well. Heat the appachatti or a pan. Pour a ladle of batter and swirl the pan. Cover and cook on high heat till the edge starts browning. It takes a minute. Then reduce the flame to medium and cook until it is cooked completely. Each palappam takes around 3 minutes.
