Brioche buns are my favourite type of bun. The specific flavour, the fluffiness: perfection.The fluffiness is the product of the quantity of butter and eggs added (more so than your average bun). Homemade brioche buns are easier than you think. A simple amount of ingredients: flour, eggs, butter, salt, yeast, sugar, sesame seeds and milk. The biggest trick to this is the kneading. For this recipe, I used my hand mixer with the dough hook attachments. It saved me tons of time and effort. If you are like me and had never tried homemade brioche buns, straight outta the oven, this recipe is perfect for you.

Recipe:
Dough:
2/3 cup milk (lukewarm, about 85 F)
2 1/4 teaspoons active dry yeast
3/4 cup all-purpose flour (3 1/4 ounces)
3 tablespoons sugar
3 cups plus 2 tablespoons all-purpose flour (14 ounces)
1 1/2 teaspoons salt
4 large eggs (lightly beaten)
8 tablespoons unsalted butter (4 ounces, at room temperature)
1 teaspoon oil
Egg Wash:
1 large egg
1 tablespoon water
top with sesame seeds (optional)
