We lucked into some spawning carp during the spring time in South Dakota. Now we will do some canning and walk you through the whole process!

Pressure canning can be dangerous but don't let this dissuade you! Just pay attention and read your users manual.
If this is your first time canning or using a pressure canner, we will go through pretty much everything you need to know.

Canning fish is one of the simplest and tastiest ways to prepare your catch for eating. For one, properly canning fish preserves the fish for many years to come, whereas freezing fish or whatever other way you plan to store fish long term doesn't guarantee the quality of the fish much past a few months.

Also, the canner works at such a high temperature that you don't have to worry about pesky Y-bones and such. They pretty much turn gelatinous while preserving the meat itself leaving you with a simple and tasty treat!
