Today's menu is a chewy texture and catchy seasoning made a fantastic seasoned dried pollack.
Try seasoned dried pollack, a national rice thief that doesn't need other side dishes.^^

✎Ingredients
Kelp water.
8g of dried kelp, 1 cup of water (200ml)
Seasoned dried pollack.
100ml of kelp water, 4 tablespoons of cooking wine, 100g of dried pollack.
· Seasoning sauce.
2 tablespoons of soy sauce, 1 tablespoon of minced garlic, 2 tablespoons of red pepper paste, 5 tablespoons of grain syrup, 100ml of kelp water.
· 1 tablespoon of sesame oil, 1 tablespoon of sesame seeds.
·Topping.
Sesame seeds and chives.

✎Making
① Add 200ml of water to 8g of kelp and soak for 30 minutes.
② Cut 100g of dried pollack into bite-size pieces and cut out small thorns or tough parts.
③ Add 100ml of kelp water, 4 tablespoons of cooking wine, and trimmed dried pollack in a bowl, soak it for about 2 minutes, add 2 tablespoons of starch powder, and mix evenly.
④ To make the sauce, add 2 tablespoons of brewed soy sauce, 1 tablespoon of minced garlic, 2 tablespoons of red pepper paste, 5 tablespoons of grain syrup, and 100ml of kelp and mix well.
⑤ Put 1 tablespoon of cooking oil in a frying pan, add dried pollack, stir-fry it for 2 minutes over medium heat, and transfer it to a plate for a while.
⑥ Put 2 tablespoons of cooking oil on a heated pan, and when white smoke slowly rises, cool it off for about 30 seconds, add 1.5 tablespoons of fine red pepper powder and stir to form red pepper oil.
⑦ Pour the seasoning into it, boil it over medium heat for 1 minute until it thickens, turn off the heat, add dried pollack, mix gently, and mix with 1 tablespoon of sesame oil and 1 tablespoon of sesame seeds.
⑧ Decorate it beautifully with sesame seeds and chopped chives.

✎Reference
*It's delicious even if you mix dried pollack or dried squid instead of dried pollack.
*When seasoning dried pollack, adding kelp water tastes better than just adding water.
*When you make chili oil, you have to cool it for 30 seconds to prevent the color from turning black.
