This pork roast is so tender and tasty, and incredibly easy to make!! Very little effort, but delicious results. Pork Shoulder roasts are best, but you can use this recipe on any of your favorite pork roasts - enjoy :)

Ivo’s Pork Roast
Ingredients:
• 1 pork roast (shoulder roast preferred, but any roast will do)
• Salt (1/2 tsp per pound of roast)
• Paprika (1 tsp per 1 ½ lbs. of roast)
• Roasted pepper/garlic spice – to taste.
• Thyme, to taste
• Sage, to taste
• I small onion, quartered.
• 1 or 2 potatoes cubed or wedges (optional)
• 2 – 3 TBSP olive oil
• 2 tsp corn starch mixed with 4 tsp water (optional, to help thicken gravy)

Process
• Preheat oven to 300 degrees F.
• In a Dutch oven (or similar), add the olive oil and the pork roast. On the stove top, just brown all sides (i.e., cook/fry for about 1 – 2 minutes per side)
• Add the onion and potato along side the roast, and with a food thermometer, set it into the thickest part of the roast.
• With the lid on, place the Dutch oven in the oven, and let bake until the internal temp of the pork roast reaches 180 degrees F. (this takes on average, about 30 min./lb. but could be as little as 20 min. per pound or as much as 40 min. per lb., depending on your oven and the roast)
• Remove roast & potatoes to a plate and tent with foil – let rest 20 min
• With an emersion blender (hand blender), blend the remaining onion with any juices. Add the corn starch/water mixture, and blend. On the stove top, cook gravy for a minute or 2
• Slice roast, cover slices with gravy and serve with the potatoes
• enjoy
