McDonald’s copycat Shrimp Filet-O (aka Ebi Filet-O aka えびフィレオ aka Ebi Katsu burger)

The Shrimp Filet-O aka Ebi Filet-O is a shrimp burger served at Japanese McDonald’s. It is one of the most popular burgers on the menu. This is my take on a copycat version. Ingredients 2 cups panko breadcrumbs A handful of large shrimp for each patty Salt & freshly ground black pepper A sprinkle of MSG (optional) 1/2 cup all-purpose flour 2 large eggs kewpie mayonnaise Panko breadcrumbs Oil for frying Mustard Lettuce Thousand island dressing Burger buns (the real ones have sesame seeds on top) Method: I’m using pre-cleaned frozen large shrimp. I defrosted and rinsed them then dried them with a paper towel. Put the shrimp in a food processor, add salt & pepper, & msg (optional). Then give a short series of pulses. You are looking for a mixture of large chunks and small chunks that bind together. A good way to do this is pulse a handful of shrimp, then add another handful, pulse again and that should give you a mixture of large and small chunks. Note: You don't want a total paste, you want it chunky so you can see the shrimp pieces. Transfer to a bowl and form patties Mix the egg and kewpie mayonnaise to form the egg wash. Set up the breading station (3 trays) flour / egg wash / panko. Coat the shrimp patty in flour, then coat it with the egg wash, then coat it completely with panko. Fry in hot oil until golden brown and cooked through. Toast the buns.You can then microwave the bun for a just few seconds it you want that steamed bun experience. Start to assemble the shrimp filet-O burger (sandwich?). Add two squirts of mustard to the base bun, place the shrimp filet-O on top. Add some lettuce then add a dollop of thousand island sauce, finally crown it off by placing on the top bun. There you have it, a copycat McDonald’s Japan Shrimp Filet-O aka Ebi Filet-0 (Japanese: えびフィレオ) aka Ebi burger. Just like the real thing… or even better. Enjoy.
