This Pasta masterclass also includes the recipes, tips & Tricks of making a good Red Sauce Pasta, White Sauce Pasta and Pink Sauce Pasta. Red Sauce Pasta also known as tomato sauce pasta, and White Sauce Pasta are the most preferred flavours of pasta. The pink sauce pasta is actually a tomato cream pasta. The red sauce pasta is quite tangy and the white sauce pasta is quite rich and luxuriant. The Pink sauce pasta, a combination of both results in a creamy tomato sauce. Red Sauce Pasta
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 2-3

Ingredients:
200g penne pasta
1 kg red tomatoes
2 tbsp chopped garlic
Salt to taste
1 tsp pepper
Basil leaves
2 tbsp olive oil
2 tsp red chili flakes
Parmesan cheese

Method:
Make a cross cut on tomatoes and blanch them in boiling water for 1 minute. Refresh in cold water and peel the tomatoes. Cut tomatoes into halves and deseed the tomatoes.
Finely chop the tomatoes.
Heat olive oil in a pan. add the chopped garlic and sauté till fragrant. Add the chopped tomatoes, salt, red chili flakes and stir. Cover and cook on low heat for 20 minutes till the tomatoes are pulpy. Crush the tomatoes, you may blitz them in a blender for a smoother sauce. Add basil leaves, pepper powder and cook for a few more minutes. Adjust seasoning.
Heat 8 cups water in a pan. add ½ tbsp salt as it comes to a boil. Add the pasta and cook for 7-8 minutes or till cooked al dante. Drain the pasta and add to the sauce. Cook for 2-3 minutes in the sauce, serve topped with parmesan cheese, basil leaves.

White Sauce Pasta
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 2-3

Ingredients:
200g pasta
1 tbsp butter
1 tbsp flour
1 ½ cup milk
4 slices processed cheese
Salt to taste
Pepper to taste
1 tbsp oil
¼ cup chopped carrots
¼ cup chopped beans
¼ cup beans
¼ cupcorn

Method:
Heat oil in a pan. add the chopped veggies, toss for 2 minutes and remove and set aside.
Heat butter in a pan, add the flour and cook for 30 seconds. Add the milk and cook till the sauce thickens, add the cheese slices, salt, pepper to taste and mix. Now add cooked vegetables.
Heat 8 cups water in a pan. add ½ tbsp salt as it comes to a boil. Add the pasta and cook for 7-8 minutes or till cooked al dante. Drain the pasta and add to the sauce. Cook for 2-3 minutes in the sauce, serve topped with parmesan cheese, basil leaves.



Pink Sauce Pasta
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 2-3

Ingredients:
200g pasta
1 cup red sauce
1 cup white sauce
½ cup cream
Salt to taste
Parmesan cheese
Sliced olives

Method:
Mix together the red sauce, white sauce, cream in a pan and bring to a slow simmer. Heat 8 cups water in a pan. add ½ tbsp salt as it comes to a boil. Add the pasta and cook for 7-8 minutes or till cooked al dante. Drain the pasta and add to the sauce. Cook for 2-3 minutes in the sauce, serve topped with parmesan cheese, olives.
