Helps when you are in hurry; keep this South Indian breakfast mix ready at home and you can make Idli, Upma, Uttapam and Appe from the same. Reminds me of cricket match when on the last ball of the last over, you needed 4 runs; then this is the answer. 😀

Ingredients:
For Premix:-
2 tbs Oil
2 tsp Mustard Seeds (Rai)
2 tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
2 tsp Bengal Gram Split (Chana Dal)
2 tsp Split and Skinless Lentils (Urad Dal)
1 small finely chopped Ginger knob (optional)
Finely chopped Green Chillies (as per taste)
6-7 chopped Cashews (Kaju)
2 Dry Red Chillies
Few Curry Leaves (Kadi Patta)
2 cup Semolina (Suji/Rava)
Salt as per taste
For Idli, Appe & Uttapam:-
1 cup Curd (Dahi)
3-4 spoon water
1 medium sized finely chopped Onion
Some finely chopped Beans
Some finely chopped Carrot
Handful of finely chopped Coriander
1 small packet Fruit Salt (Eno)
Oil for frying

Method:
Heat up the pan, add 2 tbs Oil
Add 2 tsp Mustard Seeds (Rai)
Add 2 tsp Cumin Seeds (Jeera)
Add a pinch of Asafoetida Powder (Hing)
Add 2 tsp Bengal Gram Split (Chana Dal)
Add 2 tsp Split and Skinless Lentils (Urad Dal)
Roast on medium heat until golden-brown
Add a small finely chopped Ginger knob (optional)
Add finely chopped Green Chillies (as per taste)
Add 6-7 chopped Cashews (Kaju)
Add 2 Dry Red Chillies
Add few Curry Leaves (Kadi Patta)
Roast everything well for 5-7 minutes
Add 1/2 cup Semolina (Suji/Rava)
Now roast on medium heat for 7-8 minutes
Add Salt as per taste
Mix it and turn off the heat
Let the Premix cool down, keep it in an air tight container and store in refrigerator for a month
Further to make Idli, Appe & Uttapam from this Premix, take a mixing bowl
Add 1.5 cup Premix
Add 1 cup Curd (Dahi)
Add 2 spoon water and mix it well
Rest the mixture for 15-20 minutes
If the batter is too thick add some water and mix it
Add vegetables as per your choice
(1 medium sized finely chopped Onion, Beans, Carrot & Coriander)
Add Salt as per taste
Add 1 small packet Fruit Salt (Eno)
And mix everything well
To Make Idli, grease Idli stand and add batter in it
Steam the Idlis
To Make Uttapam, drizzle some Oil in pan
Add batter to the pan to make small Uttapam
Add some Coriander and drizzle Oil
Cook both sides until golden-brown
To Make Appe, add Oil in all cavities of appe pan
Add batter in each cavity, cook until golden-brown brown from both sides
