Ube Bibingka Cheesecake
Cheesecake is loved almost everywhere and we have so many different flavors because of the creamy, smooth and silky texture of it.
That's why Filipino created a new flavor of cheesecake and that is Bibingka Cheesecake. Bibingka is a classic Filipino delicacy,  that is typically made with glutinous rice flour, coconut milk and topped with salted egg, cheese and grated coconut meat. It is one of the best seller during Christmas season in the Philippines.
Bibingka Cheesecake is perfect for holidays, you can serve this to your family and you can also sell this as a whole or per slice. If you do not have oven don't worry because this recipe is no bake and no gelatin needed. Just prepare your steamer and you are good to go.

Crust Ingredients:
2 cups graham crackers, crushed
1 stick butter/margarine, melted
1/3 cup brown sugar
1/2 ts cinnamon powder

Cheesecake base:
450g cream cheese, softened at room temp.
1/2 cup all purpose cream
1 cup white sugar
2 tbsp all purpose flour
4 eggs
1 cup coconut milk
1 cup ube halaya
1/2 tsp violet food color

Fillings and toppings:
1-2 pcs. salted eggs, sliced
5 slices cheese
1 cup ube halaya
