Resep Pad Thai. Pad Thai merupakan salah satu hidangan khas Thailand. Kwetiau goreng dengan cita rasa khas dari bumbu-bumbu Thailand dan berbagai tekstur yang unik. Dilengkapi dengan thai tea yang segar dan manis. Bisa mengobati kangen jajanan Thailand.

Resep Pad Thai & Thai Tea (untuk 2-3 porsi)

Bahan:
2-3 porsi KAF rice stick kwetiau
3 buah tahu putih, potong memanjang
15 ekor udang kupas
5 siung bawang putih, cincang
6 siung bawang merah, iris
2 sdt ebi, rendam
20 gr kucai
60 gr tauge
2 butir telur
2 sdt paprika bubuk
50 ml air
Merica

Saus pad thai:
4 sdm fish sauce Tiparos
4-5 sdm gula palem / gula
1 sdm oyster sauce Healthy Boys
½ sdm soy sauce / seasoning sauce Golden Mountain
7 sdm air + 75 gr asam jawa, saring
1 sdm chili sauce / sriracha Golden Mountain

Pelengkap:
Bawang son
Gula
Kacang tanah goreng, hancurkan
Jeruk nipis
Chili flakes
Tauge

Thai tea:
60 gr thai tea ChaTramue
1 liter air
350 ml susu evaporasi
Simple syrup (100 gr gula + 100 gr air)
Es batu

Langkah:
1. Rendam KAF stick rice kwetiau dengan air dingin selama 15-20 menit
2. Rendam ebi lalu keringkan dan cincang
3. Campurkan semua bahan saus pad thai, masak hingga mendidih
4. Tumis tahu hingga kecokelatan dan membentuk kulit, masukkan bawang merah, ebi, bawang putih, dan merica lalu aduk rata
5. Masukkan KAF stick rice kwetiau dan paprika bubuk
6. Tambahkan saus pad thai, aduk rata dan tambahkan air
7. Masukkan udang dan telur, aduk rata
8. Tambahkan tauge dan kucai, lalu masak sebentar dan matikan api
9. Sajikan Pad Thai dengan gula, jeruk nipis, bawang son, kacang tanah, tauge, dan chili flakes sebagai pelengkap
10. Untuk thai tea, didihkan air lalu masukkan kedalam wadah berisi thai tea ChaTramue lalu aduk rata dan diamkan 3-5 menit kemudian saring (bisa juga teh ikut direbus)
11. Siapkan es batu 2/3 dari ukuran gelas, tuang 150 ml biang thai tea, 20-30 ml simple syrup dan 50 ml susu evaporasi lalu aduk rata
12. Thai tea siap disajikan

Pad Thai & Thai Tea Recipe (yield: 2-3 servings)

Ingredients:
2-3 serving KAF Rice Stick Kway Teow
3 pc white tofu, slice lengthwise
15 pc peeled shrimp
5 clove garlic, chopped
6 pc shallot, sliced
2 tsp dried shrimp, soaked
20 g chives
60 g beansprouts
2 pc egg
2 tsp paprika powder
50 ml water
Salt

Pad Thai Sauce:
4 tbsp Tiparos fish sauce
4-5 tbsp palm sugar / sugar
1 tbsp Healthy boys oyster sauce
½ tbsp Golden Mountain soy sauce / seasoning sauce
7 tbsp water + 75 g tamarind, strain
1 tbsp chili sauce / Golden Mountain sriracha

Condiments:
Spring onions
Sugar
Fried peanuts, crushed
Lime
Chili flakes
Beansprouts

Thai Tea:
60 g ChaTramue Thai Tea
1 L water
350 ml evaporated milk
Simple syrup (100 g sugar + 100 g water)
Ice cubes

Steps:
1. Soak KAF Stick Rice Kway Teow in cold water for 15-20 minutes.
2. Soak the dried shrimp, pat dry, and chop.
3. Combine all the Pad Thai sauce ingredients. Bring to a boil.
4. Stir-fry the tofu until it is browned and skin is formed. Add the shallots, dried shrimp, garlic, and pepper in. Mix well.
5. Add the KAF Stick Rice Kway Teow and paprika powder.
6. Pour the Pad Thai sauce in. Mix well and add some water in.
7. Add the shrimp and egg. Mix well.
8. Add the beansprouts and chives in. Cook for a bit, then turn the heat off.
9. Serve Pad Thai with sugar, lime, spring onions, peanuts, beansprouts, and chili flakes as condiments.
10. For the Thai Tea, bring water to a boil and pour into the jug with ChaTramue Thai Tea leaves. Mix well. Let it seep for 3-5 minutes and strain (or boil the tea with the water).
11. Add ice cubes until the glass is ⅔ full. Add 150 ml of the thai tea concentrate, 20-30 ml of simple syrup, and 50 ml of evaporated milk. Mix well.
12. Thai Tea is ready to serve.
