Acadian Potato Pancakes

A family recipe for many generations, these are "Acadian" potato pancakes differ from the Irish Boxty or the Jewish Latkes. Our Gaudet family originate from Western Nova Scotia and in recent generations settled in Clare, Nova Scotia. Ingredients: potatoes, corned beef, egg, half cup of flour, onion, salt and pepper. This video makes approx. 16 pancakes. Special thanks to my father for helping to pass this recipe down to future generations. More family recipes to come!
