Kankun, kangkong is known as water spinach, water morning glory, water convolvulus. It is a popular green eaten in South East asia. Maldivians mainly cook it with meat sources such as beef, tuna and chicken. Let's list out the ingredients for this tasty, juicy and healthy beef stir fry.

For beef marination:
 - 300g beef (thinly sliced)
 - 1/4 Tsp Salt
 - 1/4 Tsp banking soda
 - Pinch tumeric powder
 - 1 Tbsp lime juice

For the stir fry:
 - 1 Tbsp cooking oil, I used sunflower oil
 - 1 onion (medium), sliced
 - 2 garlic cloves, chopped
 - 1/4 cup curry leaves
 - 4 nos. Dried red chilli (cut in half)
 - 2 green chillies ( cut in half)
 - 1 ginger slice small (1 cm thick)
 - 1 bundle (20 nos.) kankung / water spinach
 - 1/2 Tsp black pepper powder
 - 2 Tbsp dark soy sauce
 - 1 Tbsp oyster sauce
 - 1 cup water

Directions:
- Separate leaves from the stalks and cut the stalks 1 inch long.
- Slice the onion thinly. Finely chop the garlics, slice the dried red chillies and green chillies in half.
- Marinate the beef with salt, baking soda, tumeric and lime juice. Mix well. Baking soda is used as a tenderiser for meat.
- On a pan on medium heat, add oil, sliced onion, chopped garlic, curry leaves, dried red chillies, green chillies, and ginger slice. Saute until onions are lightly brown. Keep the flame on medium, stiring occasionally, for 2 mins and lower the heat and cook the onions on low heat until lightly browned.
- Once onions are lightly brown, turn the heat to medium and add marinated beef mixture and cook 5-7 mins until juices beef is completely gone. You will hear crackling sound and there will be oil visible in the pan.
- once water is completely gone add, kankun stalks and stir fry for 2-3 minutes
- Add black pepper powder, dark soy sauce, oyster sauce, and mix well. Add water and cook on low heat for 2-3 mins.
- Add kankun leaves and mix well for not more than 1 minute. Turn off the heat. The leaves don't need extra cooking time as it will be cooked from the steam from the dish as well.
- Enjoy with plain rice or fried rice of your choice.
