Since in Winter we get the best Spinach, I feel like adding it to as many dishes as possible. Here is Palak Khichdi. Simple, Easy & Quick. Just ensure you blanch palak correctly so that it stays green. Adding its pure at the right time and tempoerature is also important else it will turn dark.

Ingredients :
1/2 cup Rice (soaked in water)
1/2 cup Yellow Lentils (Moong Dal soaked in water / alternatively Chana Dal or Tuvar Dal can be used)
1.5 cup Water
Salt as per taste
A bunch of Spinach (Palak)
4 Green Chillies
1 Lemon Juice
1 tsp Oil
1 tbs + 1 spoon Ghee
1 tsp Cumin Seeds (Jeera)
2 + 1 Dry Red Chillies
1/2 tsp Asafoetida Powder (Hing)
5-6 finely chopped + 2 sliced Garlic Cloves
1 medium sized finely chopped Onion
1 tsp Garam Masala
1/2 tsp Turmeric Powder (Haldi)
1 tsp Coriander-Cumin Seeds Powder (Dhaniya-Jeera Powder)
Some finely chopped Carrot & French Beans (optional)

Method :
In a pressure cooker, add 1/2 cup Rice (soaked in water)
Add 1/2 cup Yellow Lentils (Moong Dal soaked in water)
Add 1.5 cup Water
Add Salt as per taste
Fix the lid and cook up to 2 whistles on medium heat
Add a bunch of Palak in hot water, remove in 5 seconds and transfer it in a bowl of Ice Water to cool down
Take blanched Palak in a mixer jar
Add 4 Green Chillies
Add 1 Lemon Juice
Churn to make thick paste
Further heat 1 tsp Oil & 1 tbs Ghee in a pan
Add 1 tsp Cumin Seeds (Jeera)
Add 2 Dry Red Chillies
Add 1/2 tsp Asafoetida Powder
Add 5-6 finely chopped Garlic Cloves
When garlic turns brown, add 1 medium sized finely chopped Onion
Add Salt as per taste
Add 1 tsp Garam Masala
Add 1/2 tsp Turmeric Powder (Haldi)
Add 1 tsp Coriander-Cumin Seeds Powder (Dhaniya-Jeera Powder)
Add some finely chopped Carrot & French Beans (optional)
Cover lid and cook the vegetables for a while
Add cooked Dal Chawal and Palak Puree in it
Mix everything well
Cook for 5-7 min on medium heat
Further for tempering heat 1 spoon Ghee in a pan
Add 2 sliced Garlic Cloves
Add 1 Dry Red Chilli and turn off the heat when garlic turns golden-brown
Serve warm in a bowl and add tadka on it
