This helps me continue making quality content.) RECIPE SUMMARY: heat 2 tbsp of oil in a large pan over high heat. Add the okra. Mostly let it sit, only stirring a couple times. When you stir, do so slowly and gently with a fish spatula to cook the okra without getting slimy. Cook until it's slightly brown. Remove from the pan. Reduce heat to medium. Cover the bottom of the pan with oil (2-4 tbsp). Add 3/4ths of the sliced onions and brown them for 5-10 minutes. Add spices and stir. Bloom for 2-3 minutes. Add tomatoes and simmer until softened. Stir and add the okra. Gently fold it all together. Top with remaining onions, cover, and steam for 20 minutes.
