Ingredients for the roast pork
1.3 bid 1.5 kg pork shoulder with rind
1 liter of water
120 g of salt
No other ingredients.
For the sauce:
2 carrots
2 parsley roots
200 g celery
2 onions
200 ml red wine
500 ml of broth
2 tbsp powdered sugar
2 tbsp tomato paste
Roast leftovers from the pork crust, dissolved with 1/2 glass of water
1 tbsp clarified butter
