How To Smoke Country Style Ribs On A Weber Kettle

Country style ribs, well not a rib at all, kinda just fit into that nostalgia meal for me. I ate a bunch of these when I was younger, and it was just as good this time around. This is another really easy recipe to follow, so I hope you enjoy it.

Country style ribs from your nearest grocery store or butcher (1-1/2" thick)
BBQ rub
Sweet bbq sauce
Vinegar bbq sauce

Start a chimney of lump charcoal for the Weber Kettle, or whatever charcoal grill that you have. While the charcoal is lighting, rub the country style ribs with your favorite bbq rub. Once the charcoal is lit, dump it onto the charcoal grate on just one side of the grill for a 2 zone grilling setup. Let the grill come up to a temperature of about 275-300* at the grate level on the cooking side. Place the country style ribs on the side opposite of the charcoal, and add a couple chunks of cherry wood and one chunk of hickory for smoke.
After about an hour and a half, flip the country style ribs, and dust with a little more rub. Cook till an internal temperature of around 180*, and get them off the grill to wrap. Wrap them tightly in heavy duty aluminum foil with some of each bbq sauce and a little rub. Place them back on the grill, and cook till an internal temperature of around 205. Remove, sauce both sides withe sweet bbq sauce, and place back on the grill over the charcoal for a quick sear of about 15-30 seconds each side. They are now ready to eat.
