Today's recipe is "Teriyaki Chicken with Sansho". "Teriiyaki" originated in Japan is widely known as "Teriyaki Sauce" overseas. Overseas "Teriyaki Sauce" is not only for Japanese food but also includes seasoning like sweet barbecue sauce used for a wide range of dishes such as sandwiches and hamburgers. Today's Japanese ingredient is Japanese pepper called "Sansho" in Japanese. In Japan we normally use a moderate quantity of sansho for seasoning oily grilled eel called "Unagi" in Japanese, Teriyaki chicken, and any other rich taste food to add a refreshing flavor. It is one of the best cooking spices in Japan; it has been used by Japanese for more than 3000 years. [Ingredients (for 2 servings)] 1 Boneless chicken thigh (approx. 250g) 2 tbsp Cooking oil 2 tbsp Potato starch 2 tbsp Soy sauce 2 tbsp Mirin 2 tbsp Sake 1 tbsp Sugar 1 tsp Sansho Salt Pepper [Directions] Cut and open the thick part of the meat outwards. Remove any sinews. In a plastic bag put a little salt and pepper, for removing the smell, and potato starch. Put chicken thigh in the bag and sprinkle with the powder. When the meat is covered by the powder, remove it from the bag. Brush off excess powder. Whisk together soy sauce, Mirin, Sake and sugar to combine. Set aside. Pour cooking oil in a frying pan. Place the chicken skin side down. Cook over medium heat for a couple of minutes until the skin becomes golden brown. By frying the chicken with plenty of oil, the skin becomes crispy. Turn the chicken over and cook over medium heat for 1 or 2 minutes until golden browned. Wipe off excess oil with a paper towel. Put the chicken skin side down again. Add the mixed sauce and boil over medium heat. When the sauce thickens, turn the meat over so that the back side can be also covered with the sauce. Cut the chicken into bite-size pieces. Serve on a plate and sprinkle with Sansho. Ready to eat! [Today's Tips] Tip 1 – Cutting the chicken evenly helps to cook meat tender and juicy.
