Hello, I am Casayun.
Today, I will be sharing how to make moist and soft Madeleine muffins.

This Madeleine muffins are my family’s favorite dessert recipe that I always make for them.
There are no special processes and ingredients required to make a Madeleine, but making a really delicious Madeleine can be difficult.
I've made a lot of different famous Madeleine recipes, but most of them are not in my taste.
If you've always been unsuccessful in making Madeleines, I hope you would really try my recipe!

 Madeleine muffins
              20 mini muffins
Eggs 3
Sugar (granulated) 140g (½ cup + 2 Tbsp)
All purpose flour 110g (½ cup + 3 Tbsp)
Baking powder 7g (1/2 Tbsp)
Salt 5g (1 tsp)
Cooking oil 1 Tbsp
Honey 15g (2 tsp)
Vanilla extract 2 tsp
Lemon zest 2 tsp (from 1 lemon)
Milk 45g (2 Tbsp + 2 tsp)
Melted unsalted butter 135g (½ cup + 2 Tbsp / room temperature)

Please prepare ✔️
* Prepare eggs and milk at room temperature.
* Prepare lemon zest from 1 lemon.
* Melt the unsalted butter and prepare it at room temperature.


1. Mix eggs and sugar in a clean bowl. Mix well for at least 2 minutes until it gets volume and light yellow color.
2. Add the sifted flour and baking powder in 2 portions and mix.
3. Add all the remaining ingredients except butter and mix well.
4. Add room temperature melted unsalted butter to the batter and mix gently using a spatula.
5. Cover the top of the bowl and place in the refrigerator for at least 6 hours.
6. Before baking, preheat the oven to 185℃ (365℉) for at least 30 minutes and bake for 15 minutes.
