Chinese Winter Melon Soup will warm you up in the winter and cool you off in the summer.  Uses traditional Chinese ingredients like honey dates, ginger and dried Chinese mandarin peel.   You can buy this winter melon at Asian supermarkets.  Usuall a winter melon is quite large. The melon is cut into small pieces , such as the ring shown in the video.  You can also use other kinds of Chinese melons for this recipe.   This soup can also be made without meat or bones.  The meat and bones gives the soup nice, rich flavour.

Winter Melon Soup With Pork Hock

4 to 5 cups winter melon
1 pork hock
5 honey dates
1/2 cup Chinese south almonds
1 1/2 dried Chinese mandarin peel
2 pieces ginger (thumb size)
10 or more cups water
2 teaspoon salt

Cut pork hock into 4 to 5 pieces.  Parboil for 5 to 10 minutes to remove some of the impurities and dirt.  

Briefly soak the Chinese honey dates, Chinese south almonds, ginger and dried Chinese mandarin orange.

Wash the winter melon in cold water.  Cut out seeds in the centre.  Cut melon into large chunks.  

Put 10 to 12 cups water in a cooking pot.  Put heat on high. Put in all the pre-soaked ingredients.  Put in pork hock and winter melon.
When the soup stock starts to boil, turn heat down to low to medium.  Simmer soup stock for  1 1/2 to 2 hours.  Add salt and stir in just before serving.  You can take out the pork hock and make another dish or you can serve some of the pork hock in the soup.  Be serve to have some rice ready.  I like to eat this soup with rice.  Enjoy!
