Got an extra cheesy one for you today!! Chicken parmesan STUFFED SHELLS. I know, it's brilliant. And delicious. And I'm super bummed I don't have leftovers still. What I did different:

1. I used Pomi finely chopped tomatoes for the filling and as the bed for the stuffed shells. I just seasoned with salt and added a bit of butter to mine, but you can add whatever you'd like (chopped onions, garlic, etc)! I used 2 cans for the filling and one for the pan, but when I remake I will use 2 cans for the pan so I have extra sauce!

2. I didn't use pre-breaded chicken -- I breaded my own! Just need a couple cups of breadcrumbs (I used a combo of panko and Italian) and AP flour, both seasoned with salt and pepper, and a couple of eggs beaten with water (and salt and pepper) to bind. I used chicken tenderloins for this, seasoned all around with salt and then dredged in flour, then egg, then breadcrumbs, making sure to shake any excess off at each station!

3. I made mine stove top and put under the broiler to save some time, but feel free to put in the oven if you'd like! To make stove top, just add the sauce to the pan, nestle the stuffed shells on top, sprinkle liberally with mozzarella, and cover until the cheese is melted. Then pop under the broiler in your oven for a few minutes until the cheese starts to brown and the shells get lil crispy bits on top.

4. I added calabrian chili pepper paste to the filling! I added a tbsp bc Shane doesn't like spice, but I def recommend adding more. Make it as spicy as you'd like! If you don't have calabrian chili pepper paste, you can use red pepper flakes instead!
