Dum Qeema Biryani
Serves 5-6
Recipe in English:

Ingredients:
-Cooking oil ½ Cup
-Pyaz (Onion) sliced 1 medium
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Haldee powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Dhania powder (Coriander powder) 1 tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Garam masala powder 1 tsp
-Beef qeema (Mince) ½ kg (hand chopped)
-Hari mirch (Green chilli) chopped 2 tbs
-Lemon juice 1 tbs
-Dahi (Yogurt) whisked 1 Cup
-Pani (Water) as required
-Sabut kali mirch (Black peppercorns) ½ tsp
-Badi elaichi (Black cardamom) 2
-Darchini (Cinnamon stick) 2
-Tez paat (Bay leaves) 3
-Hari elaichi (Green cardamom) 2-3
-Laung (Cloves) 4-5
-Zeera (Cumin seeds) 1 tsp
-Namak (Salt) 1 & ½ tbs
-Hara dhania (Fresh coriander) chopped ½ Cup
-Podina (Mint leaves) chopped ½ Cup
-Hari mirch (Green chillies) 2-3
-Chawal (Rice) basmati ½ kg (soaked for 30 minutes)
-Pyaz (Onion) fried handful
-Pyaz (Onion) fried
-Zarda ka rang (Yellow food color) ½ tsp or as required
-Doodh (Milk) 2 tbs

Directions:
-In frying pan,add cooking oil,onion and fry until golden brown.
-Ad ginger garlic paste and mix well.
-Add turmeric powder and mix well.
-Add red chili powder,coriander powder,salt,garam masala powder,mix well and cook for 2 minutes.
-Add beef mince,mix well until changes color and cook for 12-15 minutes.
-Add green chili,lemon juice,mix well and cook until oil separates.
-Add yogurt and mix well,cover and cook on low flame for 12-15 minutes then cook on high flame until oil separates & set aside.
-In pot,add water,black peppercorns,black cardamom,cinnamon sticks,bay leaves,green cardamom, cloves,cumin seeds,salt,fresh coriander,mint leaves,green chillies,mix and bring it to boil.
-Add rice and boil until 3/4th done then strain.
-In pot,add a layer of boiled rice,cooked mince,fried onion,boiled rice and fried onion.
-In milk,add yellow food color and mix well.
-Add dissolve food color,cover and steam cook on low flame for 10-12 minutes.

-Frying pan mein cooking oil aur pyaz dal dein aur golden brown hunay tak fry ker lein.
-Adrak lehsan paste sal ker ache tarhan mix karein.
-Haldee powder dal ker ache tarhan mix ker lein.
-Lal mirch powder,dhania powder,namak aur garam masala powder dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
-Beef qeema dal dein aur rang tabdeel hunay tak ache tarhan mix karein aur 12-15 minutes kliya paka lein.
-Hari mirch aur lemon juice dal ker ache tarhan mix karein aur oil alag hunay tak paka lein.
-Dahi dal ker ache tarhan mix karein aur dhak ker halki ancch per 12-15 minutes kliya paka lein phir tez ancch per oil alag hunay tak paka lein & side per rakh dein.
-Pot mein pani,sabut kali mirch,badi elaichi,darchini,tez paat,hari elaichi,laung,zeera,namak,hara dhania, podina aur hari mirch dal dein aur ubal anay dein.
-Chawal dal dein aur 3/4th done hunay tak boil ker lein phir strain ker lein.
-Pot mein boiled chawal ki layer laga lein,cooked qeema,fried pyaz,boiled chawal aur fried pyaz dal dein.
-Doodh mein zarda ka rang dal ker ache tarhan mix karein.
-Dissolve zarda ka rang dal dein aur dhak ker halki ancch per 10-12 minutes kliya steam cook ker lein.
