Rocking Roasted Rack of Lamb

Treat yourself, friends and family to a really rockin dinner!!  Making a rack of lamb is super simple! Give it a shot for sure,

Ingredients:

! Rack of lamb
1 Cup Panko bread crumbs
Lots of fresh herbs; oregano, sage, rosemary
1 Bunch parsley chopped fine
2-3 Oz. Olive oil
2 Oz. Dijon mustard

Procedure:

1. Preheat the oven to 450 degrees.
2. French the bones by cutting the meat in-between the bones off. You can freeze this meat and save for a later time.
3. Coat the lamb with the fresh herbs, salt and pepper.
4. Heat an ounce of olive oil over high heat in a large pan till smoking; sear the rack on both sides till golden brown.
5. On a lined baking sheet, bake for 4 minutes.
6. While the rack roasts, combine the bread crumbs, parsley, and about 1 Oz. olive oil in a food processor.
7. After 4 minutes, remove the rack, brush with Dijon mustard and pack on the bread crumb mixture.
8. Return to the oven and bake an additional 4 minutes or a perfect medium rare,
9. Remove the rack and allow it to rest for at least 5 minutes. Slice and serve.

For a quick sauce combine 1 bunch scallions chopped with 2 Oz. Olive oil in a food processor and pulse. Drizzle on top. Rockin!!
