In Lebanon this dessert is known as “Riz B Haleeb” which translates to rice in milk. Lebanese style riz b haleeb is thick and delicious and made by adding orange blossom water to sweetened rice cooked in milk #ClaudettesKitchen Rice pudding is a universal dessert, found in many cultures, in different forms, and under different names.   Lebanese peeps don’t have a monopoly on it this time. However what probably makes this a “Lebanese” version is the addition of orange blossom water (mazaher) to the recipe. In Lebanon this dessert is known as “Riz B Haleeb” which translates to “Rice in Milk.”

Ingredients
- 2 cups rice, washed and soaked for 1 hour to inflate
- 3 cups water
- Cook the rice about 25 minutes on med-low heat, once boiling turn on low heat until the rice absorb all water.
- After 5 minutes give it a stir
- When the holes appear, give it a little stir too and let the rice on the heat to completely water disappear (rice absorb water)
- ¾ cup corn flour
- 6 tablespoons powdered milk
- ¾ cup Granulated Sugar
- 0.4 ml water
- When rice absorb water stir and add the milk over it
- Continue stirring about 2 minutes with non-stop until the rice become thicker
- After he rice become thicker add 15 ml of rose water give it a stir then turn off the heat

Orange blossom water is a flavoring syrup made by distilling flowers from orange trees and is generally added to many Arabic/Turkish/Lebanese desserts. There are a few different variations of it. The basic ingredients are water, sugar, and orange blossom water, then you would add rice powder and/or rice and/or corn flower.

Rice pudding is a comfort food in so many cultures – growing up in the north of England it was a staple – typically served at school dinners warm with a dollop of jam atop it. Riz Bi Haleeb is typically served cold, but this version can be served warm if you desire. As with most desserts from the Middle East, it is typically finished with a floral water (orange blossom is traditional), but you can omit if it doesn’t suit you.

The pudding can be made parve or vegan by simply substituting with non-dairy milk – the pictured rice pudding above was made with unsweetened almond milk. The addition of cornstarch helps to thicken the pudding when non-dairy or lower fat milks are used. This delicious Lebanese Rice Pudding (Riz Bi Haleeb) is super delicious and made with only 3 main ingredients, Rice, Milk and Sugar. It's served as dessert and even as breakfast and snack. It is also perfect for Suhoor during Ramadan. Riz bi Haleeb is a very popular rice pudding from Lebanon. The literal meaning of Riz bi Haleeb is Rice in Milk. Another ingredient which makes Riz bi Haleeb unique is the mild essence and flavor of orange blossom water which is used in many Middle Eastern recipes.

Orange blossom water is a by-product of the process of distillation that is used to obtain the essential oil from the seeds, peel, leaves, bark, and pulp of orange.
