Pepper Brinjal Fry Recipe - Milagu Kathirikai Varuval
Brinjal is a vegetable often found in many Indian recipes. It is generally used to make this fry recipe. The recipe can be found below:
Ingredients:
-50 ml of oil/ ghee (I would recommend using oil instead of ghee but if you prefer, you can use ghee)
-1 chopped onion (medium size)
-2 medium chopped tomatoes
-2 teaspoons red chilli powder
-½ teaspoon turmeric powder
-1 teaspoon ginger garlic paste (you can substitute this for fresh ginger and garlic)
-400-gram pieces of brinjal chopped (chopped into 1-inch cubes)
-1 tbsp black pepper powder

Brinjal is a tender vegetable in the gourd family. It has a unique taste and crunchy texture. Fry it to bring out its flavor.
This is an easy recipe for brinjal fry that can be made in two ways - either with or without onions. To make this dish, you need to cut the brinjal into medium-sized pieces, add salt and other ingredients to it, stir well, add some oil when the pan becomes hot, then cook the brinjal on medium heat until golden brown in color.
