How to Make Banana Leaf Rice (MALAYSIAN FOOD) - The Overseas Malaysian

Since I've been stuck in U.K. because of coronavirus, I have been missing the Nirwana Maju banana leaf rice back in Kuala Lumpur. So I decided to make it myself at home! Some of the ingredients were quite hard to find but I managed to order most of it online (including the banana leaf, frozen king/tenggiri fish & Baba's Curry Powder) from www.veenas.com (not sponsored). Recipe below:

FISH CURRY
-2 tomatoes (quartered)
-5 pcs Okra/bhindi (whole)
-6 shallots (ground)
-2 shallots (chopped)
-3 cloves garlic (ground)
-3 green chilli (chopped)
-Some curry leaves
-1/2 tsp Mustard seeds
-1/2 tsp Fenugreek seeds
-5 tbsp Baba's Fish Curry Powder
-3 pcs King Fish (Tenggiri/Spanish Mackerel)
-1/2 cup Coconut milk
-1/2 cup Tamarind water (tamarind soaked in water)
-5 tbsp Cooking oil
-Salt
1) Heat 5 tbsp oil in a saucepan.
2) Add fenugreek seeds, mustard seeds and some curry leaves.
3) Add ground shallots & garlic. Fry till fragrant.
4) Add chopped tomatoes, onions and green chilli.
5) Dilute Baba's Fish Curry Powder with a bowl of water and add it to the saucepan. Add 2-3 more cups of water.
6) Boil 5-7mins. Add more water if needed.
7) Add 1/2 cup coconut milk and stir.
8) Add the fish and okra. Then simmer for another 5-10mins. Season with salt.

PAPADUM
-1 pack papadums
-Oil for frying
1) Deep fry in oil for 10 seconds.

FRIED BITTERGOURD
- 1 large bittergourd/Karela (sliced thinly)
Batter:
-Pinch of salt
-2 tsp Turmeric powder
-2 tsp Ground cumin
-2 tsp Chilli Powder
-1 tsp Garam Masala
-2 tbsp Rice flour
-2 tbsp Corn flour
-A little water
-Oil for frying
1) Soak the bittergourd slices in salt water for 20-30mins. Air-dry on paper towels if you have time for extra crispiness.
2) Mix the batter ingredients with some water. It should have the consistency of paint.
3) Dip the slices in batter and deep fry in hot vegetable oil for 2-3 mins until brown and crispy.

FRIED KING FISH (TENGGIRI GORENG)
- 2 pcs King Fish (Tenggiri/Indian mackerel)
Batter:
-Use same ingredients as the bitter-gourd batter plus the following:
-1 inch piece ginger (ground)
-3 cloves garlic (ground)
-2 tsp Chilli powder
-2 tsp Coriander powder
-A dash of black pepper
1) Coat the fish with batter. You can leave it overnight in the fridge for extra flavour!
2) Shallow fry for 4 mins each side.

CUCUMBER PACHADI (South Indian Cucumber Raita)
-1/2 cup Yogurt (i used greek yoghurt)
-1/2 tsp Mustard seeds
-1 Cucumber (diced into cubes)
-3 shallots (chopped)
-Curry leaves
-1 green chilli (chopped)
-2 dried red chilli (coarsely chopped)
-1 inch piece ginger (finely chopped)
-Cooking oil
1) Heat 2 tsp of oil and saute the ginger & shallots for 2 mins on medium heat.
2) Add the cucumber & green chilli and cook for 4 mins.
3) Remove from pan and set aside in bowl. Add the yoghurt and mix.
4) Heat 1 tsp oil & add 1/2 tsp of Mustard seeds in pan.
5) Add the dried chilli, curry leaves and saute for 2 mins.
6) Add this mixture to the cucumber & yoghurt and mix.
7) Refrigerate for 1 hour or pop it in the freezer for 10mins. Serve cold.

INDIAN SPICED SPINACH
-150g Spinach (washed) - I used baby spinach
-1 tbsp Chopped garlic (I used frozen chopped garlic for convenience :P)
-1 inch ginger (finely chopped)
-1/2 tsp Ground cumin
-1 tsp Coriander powder
-1/4 tsp Turmeric powder
-1 tsp Garam masala
-1 tbsp cooking oil
1) Heat the oil and add the garlic, ginger and spices.
2) Add the spinach batch by batch and stir-fry for 5-10mins. Add water if it becomes dry.

FOR SERVING:
-Cooked white rice/brown rice
-Fresh Banana Leaf
-Indian Salted Chilli (optional)
