A healthy alternative to pork - this is our Bangus Sisig. Another good recipe to make with bangus (milkfish) is to make it sisig. When you think of sisig, it is usually associated with pork. Nowadays, different versions have come up like tofu sisig, tuna sisig, mushroom sisig, and this one, bangus sisig. In our recipe, we set aside the fish skin to present the sisig differently from the others. We fried it a little bit on the sizzling plate, spread margarine on top then added the fish sisig. Ingredients: * 1 big boneless bangus (milkfish) * To season the bangus - salt and ground black pepper * For the sisig ingredients - 1 small red onion, 1/4 tsp salt & ground black pepper, 1/2 Tbsp garlic powder and soy sauce, 1 medium white onion, 2 pcs each of green and red chilies, 1 egg, 1/2 cup mayonnaise, calamansi juice. * For the sizzling plate - oil to fry the fish skin, 1 Tbsp margarine, dash of liquid seasoning Procedure: 1. Season the boneless bangus with salt and ground black pepper. 2. Set the pan griller on high heat and brush with oil. 3. Grill the fish, skin side first. Turn over to cook the other side. 4. When it is done, transfer to a platter. 5. Shred the fish meat and leave the skin for later. 6. Heat oil in a pan. 7. Cook the shredded fish meat with the sisig ingredients. 8. Heat the sizzling plate and put oil. 9. Place the fish skin and fry a little bit. Put margarine on top. 10. Add the fish sisig, chilies, and calamansi juice. Put a dash of liquid seasoning.
