Kebab skewer / kebab bread / kebab sauce | Make it yourself at home | Chicken skewers from the oven 🥙

at the bottom i have a few more recipes for you / maybe you will find a few suitable recipes to cook at home. so now the recipe for our chicken kebab ;)


Recipe:

For the kebab skewer:
1 kg chicken breast fillet
2 wooden skewers
1 large onion
1 tomato

Chicken breast fillet in thin
Cut into slices and place in a large bowl.

Marinade:
1 onion
1 clove of garlic
80ml oil
1 tsp tomato
paprika pulp
3 tsp yogurt
2 tsp sweet paprika powder
1 teaspoon chilli flakes
1 tsp thyme
1/2 tsp pepper
1/2 tsp cumin
1/2 salt

First we put the onion and the clove of garlic in the blender and blend it, we only need the onion juice put it in a bowl. Then we add 80 ml oil, 1 tsp tomato paprika paste, 3 tsp yogurt, 2 tsp sweet paprika powder, 1 tsp chilli flakes, 1 tsp thyme, 1/2 tsp pepper, 1/2 tsp cumin, 1/2 salt and mix it whole. Finally, the meat is marinated, covered with aluminum foil and left in the fridge for 6 hours.

After the 6 hours we build a tower in which we cut a large onion through the middle, we take 2 skewers and we stick them into the onion half so that the tower doesn't collapse in the end :) if the skewers are too long and not in you can shorten it to fit the oven.
The skewer is now placed in a casserole dish, the meat is now skewered, it is best to skewer it on different sides so that it keeps its balance. When that is done, skewer the other onion half with another tomato on top. Finally, place baking paper on top. Preheat the oven to 180 degrees and bake for 80 minutes. It doesn't matter whether it's on the middle or lower shelf. After the 80 minutes we take out the parchment paper and bake for another 20 minutes. When the meat is ready, we take it out of the oven, hot, and cut the meat thinly with a knife.

doner sauce:
3 tbsp yogurt
4 tablespoons ketchup
2 tbsp mayonnaise
2 teaspoons curry spice
1 clove of garlic
1 tsp vinegar
2 tablespoons oil
1 tsp sweet paprika powder
1/2 teaspoon chilli flakes
1/2 tsp salt

Mix all of the ingredients mentioned above together well to create a nice sauce.

doner salad:
2 tomatoes
2 onions
2 handfuls of lettuce

We cut the whole thing very finely and put it all on a plate.


kebab bread:
500 gr flour type 550
350 ml (very cold water)
15 grams of fresh yeast
9 grams of salt
12 grams of sugar
17 ml olive oil

We put 500 gr of flour in the bowl, free the middle and add 350 ml of cold water, then we add 15 gr of fresh yeast, we knead it for 5 to 10 minutes. Now we put the dough on the worktop and smear the dough with 17 ml of olive oil and knead it for another 15 minutes, after that we put the dough in the bowl, cover it with a lid and let it rest for an hour and a half. The dough should rise nicely.

Then we put some flour on the worktop, put the dough on it, fold the whole thing together and cut it into 100 g pieces of dough. If you don't have a scale, you should get 8 to 9 pieces. When that is done we knead the dough pieces from the outside inwards, seal the bottom side and roll it once on the worktop. Then we put a cloth over it and let it rest for 15 minutes. Now we roll the dough pieces with the rolling pin diameter (15 cm), then place them on a baking tray with baking paper, a kitchen towel on top and let them rest for 20 minutes. Preheat the baking oven to 250, fill a tray with water and place it on the lowest shelf and our kebab bread on the middle one, bake the whole thing for 8 to 10 minutes until golden brown.

Now we can start topping the kebab. Just do it the way you like it.
