Cream of Mushroom Soup! Two secret ingredients to make it taste AMAZING!

Cream of mushroom soup is everyone's favorite for sure.
Creamy and silky, this amazing soup is not that difficult to make.

CREAM OF MUSHROOM SOUP
Ingredients:
2 cups dry mushrooms(optional)
1½lb/750g/25oz baby bella mushrooms(sliced)
4 tbsp butter
2 tbsp olive oil
2 shallots(minced)
4 cloves garlic(minced)
1½ cup Marsala wine
6-8 tbsp flour
5-6 cups mushroom broth or chicken broth
1 cup heavy cream
1 small bunch parsley(chopped)
salt pepper to taste
½ tsp dry thyme(optional)
2 tbsp dark soy sauce
(preferably mushroom flavor)

Method:

Prepare mushroom broth by pouring boiling water over them.
Chop hydrated mushrooms finely. Set aside.
2 cups of assorted dried mushrooms will make you 6 cups of mushroom broth. You can use store bought instead or add chicken broth.

Keep in mind that amount of flour and broth will depend on the size of your pot. I had 7 qt pot. Added 8 tbsp of flour to 6 cups of broth.

In a cast iron pot heat up olive oil and butter and add minced shallots.
Sauté until softened(about 2-3 minutes), add minced garlic and sauté for 1 minute.

Add hydrated mushrooms and sauté.
Add slices baby bella mushrooms, close lid and let steam for 5 minutes,
occasionally mix.
Add spices, dark soy sauce and Marsala wine, cook along.
Gradually add flour and mix so it does not clump up.
Cook for less than a minute. It will turn into very thick paste.
Add broth and mix.
Cook on simmer for 20 minutes.
Your soup will thicken up.
Turn off the heat and add cream.
Adjust seasonings.
At the end add chopped parsley and let soup rest for 20-30 minutes.
As it rests it will thicken out even more(keep this in mind and make it slightly runnier in the beginning).
