I wasn't planning to post this, but I thought it might help others. Basically, I'm testing the audio with the mic wired to a Zoom H1N external recorder, instead of using it directly with a GoPro.
The main reason for that is because the GoPro doesn't have way to manually adjust the gain/levels of the mic, so it picks up quite a lot of noise, whilst with the Zoom H1N recorded, I can play around with the mic gains, lowered them, that way there is less wind noise.
So far so good, I've compared this to my previous videos, and this definitely sounds better. The only downside to this is that, especially at lower speeds, it picks up less of the engine/exhaust sound. So I guess it really depends on what people prefer.
