There are multiple translation layers involved with rosetta 2 for x86 to ARM and DirectX11 to Metal.
The performance benchmarks we see are not representative of how the game will perform when a MacOS version eventually releases. Considering the performance we see here with multiple translations happening plus only 10-15% GPU usage, the performance we might see in the official release is looking very promising.
