All Weights & Measurements Have Been Confirmed.

Ingredients & Tools
——————
Graham Cracker Crumbs: 225 Grams
(8 Ounces)
Melted Butter: 8 Tablespoons (1 Stick)
Cream Cheese: 1015 Grams (2 LBS 4 Ounces- Approx 4 1/2 Blocks)
Sugar: 225 Grams (8 Ounces or 1 Cup)
Vanilla Extract: 1 Tablespoon
Lemon: 1 Grated Lemon Plus All Juice
Eggs: 5 Eggs At Room Temperature
All Purpose Flour: 35 Grams ( 1/4 Cup or 1 1/4 Ounces)
9 Inch Springform Tin: 1 Springform Tin

Instructions

1.) Preheat Oven To 350F Degrees.

2.) IF USING GRAHAM CRACKERS: Mix The 225g Graham Cracker Crumbs & Melted Butter Together In A Small Bowl. Press The Mixture Into A 9 Inch Springform Tin Pan. (You Can Do This With Your Hands) Then Butter The Inside Walls Of The Spring Form Tin To Prevent Cheesecake From Sticking To Pan. Chill In The Fridge until Needed.

3.) (Let Cream Cheese Sit At Room Temperature For 1 To 2 Hours) Using My Mixer, Whisk Together The 1015g (2lbs 4oz) Of Cream Cheese & 225g Of Sugar On Medium High Speed Until Smooth & There’s No Lumps.

4.) Once Mixture Looks Nice & Loose, Add In The 1 Tablespoon Of Vanilla Extract, Lemon Zest, And Lemon 🍋 Juice.

5.) Slowly Add In Eggs, (Put Eggs Into Measuring Cup & Pour, One At A Time. The Mixer Can Be Turned On High To Make Sure Eggs Are Mixed In Well.) When Fully Blended The Mixture Should Be Airy From All The Mixing.

6.) Add 35 Grams (1/4 Cup or 1 1/4 Ounces) Of Flour To The Mix, Mix & Combine By Mixing Together.

7.) Pour Cream Cheese Mixture Into The Tin That Has The Graham Cracker Crumbs Crust And Bake For Approximately 70 To 90 Minutes Depending On Your Oven. (Mine Was Done In 85 Minutes) You Will Know That The Cheesecake Is Done When It Starts To Brown a Little On Top & There Is A Little Jiggle In The Middle. Set It Aside To Cool For At Least 2 Hours Before Eating Or Placing In The Fridge. (Tip: To Avoid Cracking In Your Cheesecake Place In A Water Bath Like I Did In This Video, Or Place A Baking Pan Or Pot Filled With Water On The Shelf Below The Cheesecake As It Bakes To Allow The Steam Help In Evenly Cooking The Cheesecake. I Prefer A Water Bath.)

8.) After 2 Hours Place The Cheesecake, Still In The Tin, Into The Fridge With Aluminum Foil Around It To Chill For A Minimum Of 5 Hours For Best Results, Preferably Overnight Before Serving.
