This recipe gives for an airy, soft and fluffy doughnuts that are fried to perfection. So if you're looking for how to make the best doughnuts with detailed Recipe, then you're in the right place.

list of Ingredients
2 ¹/2 cup APF
2¹/2 tablespoons butter at room temperature
¹/3 cup granulated sugar
¹/2 tablespoon instant yeast
1large egg at room temperature
175 mil milk
¹/4 teaspoon salt
neutral vegetable oil  for deep frying

For coating
I cup of granulated sugar

you can double the recipe


PROCEDURE
1. In a large bowl crack in egg, add in milk, sugar, yeast and stir to combine. the yeast must not melt, and no need to proof the yeast since i am using instant yeast. add in flour and salt and stir to combine and form a sticky dough. cover and rest for 15minutes
2. after 15 minutes add in room temperature butter and incorporate into the dough about 4 minutes. then transfer dough unto a clean work surface and knead for 15 to 20 minutes until you achieve a smooth  and elastic dough as seen in the video. if using a stand mixer it will take about 10-12 minutes. once dough is fully kneaded form into a ball shape grease your bowl place the dough and grease the dough. cover and let it rise for 1 -2 hours or until doubled in size this depends on the temperature of your kitchen.
3. after proofing punch dough and take out the excess gas, place on work surface and form into a ball. divide the dough into 6 equal part. form each piece into a small ball by tucking the edges in until there are no visible crack PLEASE MAKE SURE THERE ARE CRACKS. place the pinched side down on a parchment paper and cover with with a kitchen towel to prevent it from drying up.
NOTE: We're placing on a parchment paper to prevent us from the touching the dough with our hands after second proofing, so that we do not deflated the fragile gas that has developed in the dough. if you do not have a parchment paper you can try as much possible to be careful when handling the dough.  
to make the regular doughnut shape without a cutter form dough as explained above, the lightly press down the dough to flatten, use a small bottle cover and press down to cut out the center to create the hole in the center of the dough. now cover your dough for hour.
4. over medium heat, heat up about of oil about 3 inches deep,to 360F. gently pick the parchment paper with the dough on it and place in the oil, after10 seconds take the parchment paper out and stir and turn. each side takes about 2 to 3 minutes to fry. do not overcrowd the pan as the doughnuts will absorb too much oil.Try to maintain medium heat while fryng, if the oil is'nt hot enough the doughnuts will absorb to much oil and be greasy.

NOTE: THE HEAT OF THE OIL SHOULD NOT BE TOO HOT, THE HEAT OF THE OIL PLAYS AN INPORTANT ROLE IN THE FINAL PRODUCT OF OUR DOUGHNUTS.
