TV chef, author, cookery school teacher and The Great British Bake Off winner, John Whaite joins us from his home kitchen, making mushroom & bacon filo pies – great for a picnic in the local countryside.

Using layers of crispy filo pastry as a case, the filling uses nutty chestnut mushrooms and streaky bacon. If you want to make these vegetarian, just leave out the bacon or swap it for roasted sweet potato or cooked chestnuts. These pies can be enjoyed hot as well.

Ingredients:
250g chestnut mushrooms
2 tsp sunflower oil
1 onion, finely chopped
6 smoked streaky bacon rashers, cut into 1cm pieces
150ml double cream
150g Gruyère, coarsely grated
¼ tsp ground black pepper
¼ tsp ground nutmeg

For the pastry
3 sheets filo pastry
40g unsalted butter, melted
