This microwave lemon curd is easy to make and has a zingy, delicious taste!

This tangy and sweet microwave lemon curd is made quite simply:
What to do with lemon curd?
Enjoy between layers of cake, on top of a cheesecake or waffles, placed in a baked tart, or straight out of the bowl with a spoon!!
Zest one lemon and set aside.
In a microwave safe bow, melt 1/2 cup of butter (one stick); add 3 eggs and 1 cup of sugar. Whisk ingredients together. Add 1 cup (4-5 lemons worth) of juice to mixture. Note - you can also use 1 cup of lemon juice concentrate.
Cook in the microwave in one minute intervals, stirring between each minute. It may take between 3-5 minutes, depending on the wattage or strength of your microwave. Mixture will be done when it has thickened and can coat the back of a spoon.
Strain mixture through a sieve and add lemon zest. Cool mixture for a few hours. It can keep in the refrigerator for about 2 weeks.
ENJOY!! This easy lemon curd is so tasty!!
