Ingredients:

Aalu (potatoes):  Ek sabith 125 gram (1 whole measuring about 125 grams)
Besan  (chickpea flour): 1 ½ cup
Bareek namak (salt): ½ teaspoon
Haldi powder (turmeric powder): 1/4th teaspoon
Lal mirch powder (red chilli powder):  3/4th teaspoon
Adrak lehsan ka paste (ginger garlic paste): 1 teaspoon
Khane ka soda (baking soda): 2 to 3 pinches
Tel (oil): for frying

Procedure:

1. Bowl mein besan, bareek namak, haldi powder, lal mirch powder, adrak lehsan ka paste, khane ka soda aur (1/2 cup) aadha cup paani dalkar achhi tarah se mila lijiye.

2. Pandrah minute ya aadhe ghante ke liye ise rakh dijiye ke besan ke lumps ghul jayen.

3. Jab besan achhi tarah se ghul jaye, aalu ko chheel kar uske paanch millimeter mote aur gol aakar ke pieces bana lijiye.

4. Frying pan mein tel daliye. Jab tel garam ho jaye, aalu ke pieces ko besan se coating kijiye aur extra besan jhatak dijiye.

5. Aalu par besan ki bahut bareek coating kijiye, jis se bhajiye bahut lazeez honge aur aalu bhi gal jayenge.

6. Bhajiyon ko dono taraf badami rang ka hone tak tal lijiye aur nikal lijiye. (Garam garam aalu ke bhajiye zyada lazeez hote hain, khane se kuchh der pehle hi taliye).

Aalu Ke Bhajiye tayyar hain.
