Yeah yeah yeah, this recipe has been done to death at this point but you can't really be an Anime based cooking show without making the Gotcha Pork Roast. Besides, this just gave me another opportunity to eat mashed potatoes and bacon!

INGREDIENTS

Roast:
500g potatoes
¼ large onion/2 shallots
100g mushrooms of choice
1tbsp butter
500g streaky bacon
Salt and pepper

Sauce:
150ml red wine
1 tbsp soy sauce
1 tbsp sake
1 tbsp butter

METHOD:
1. Peel and cut potatoes into even-sized chunks. Steam or boil for 15 minutes or until fork-tender. Remove from heat.
2. Finely dice the mushrooms and onion. Melt 1 tbsp of butter in frying pan over medium heat, until foaming. Add in mushrooms and onion, cooking for 5 – 10 minutes until the moisture from mushrooms has evaporated and you’ve achieved a golden brown colour. Season to taste and remove from heat.
3. Mash your potatoes until smooth, then fold in mushroom/onion mixture until well combined. Season to taste with salt and pepper.
4. Wrap potato filling in cling wrap and roll into a tight log. Refrigerate for 45m – 1 hr or until firm.
5. Remove cling wrap from potato filling and wrap in bacon (Bacon weave video: How To Weave Bacon Like a Pro - How T...), ensuring no potato is visible. Give the roast a good squeeze with more cling wrap to ensure the bacon fully adheres to the potato.

7. Line a baking tray with baking paper and wire rack. Coat wire rack with non-stick oil/spray. Place roast on top and bake at 190C until bacon is cooked, coloured and crisp. Remove from oven and allow to rest for 10 minutes
8. For the sauce, add red wine into a frying pan over medium heat and simmer until reduced by half. Add in sake and soy sauce. Turn off the heat and allow the sauce to cool slightly before whisking in the butter to emulsify the sauce. Season with salt and pepper. If your sauce is too thin, you can add in a cornflour slurry (2 tsp corn with 1 tsp water) into the sauce and cook over low heat until thick.
9. Pool half the sauce onto the plate, and place the roast on top of the sauce. Glaze the top of the roast with remaining sauce and garnish if desired.
10. Enjoy!
