The second installment of my postnatal freezer meal prep series for our family of ten, in the lead-up to the birth of our ninth baby, in May, 2018. While the Quiche Lorraine will have to wait a couple more weeks, I managed to get six postnatal meals in the freezer, despite being crazy-busy and getting a decent cold. This fortnight, I froze: Thai Green Chicken Curry x 2 batches Sausage Satay Stew x 2 batches Pizza x 2 batches So far, that brings my total of frozen postnatal meals to 18, with eight weeks to go until baby number nine arrives. While I ahve pushed back the next freezer meal preparation, I will be back in the swing of it within a couple of weeks, to make the last of the pre-cooked freezer meals, as well as prepare a number of slow cooker freezer meals, cakes, cookies and school lunch supplies. The recipes for the meals found in this video are as follows: Thai Green Chicken Curry (my adaptation of a recipe my mother in law once gave me for Thai Green prawn Curry): 1 batch (feeds a family of ten) 1-1.5kg (2.2-3.3lb) skinless chicken breast fillets, chopped 1-2 Ts olive (or coconut) oil 2 40ml tins coconut milk 1/2 jar kaffir lime leaves (or around 8 fresh, sliced thinly) 2ts fish sauce 1 cube palm sugar jar Thai Green Curry Paste 1-2Ts lime juice 6 spring onions (green onions) 500g green beans, fresh or frozen, sliced Serve on basmati rice Serve with toasted flaked almonds and fresh coriander (cilantro) - optional Fry chicken in oil until sealed add Thai Green Curry Paste and stir until fragrant Add coconut milk and stir Add lime leaves, fish sauce, grated palm sugar, and lime juice - stir Add sliced spring onions and green beans Bring to boil, turn down to simmer, and let simmer for around 15 minutes Serve on basmati rice, with toasted flaked almonds and fresh coriander (cilantro), if desired. Sausage Satay Stew: www.familycorner.com/forums/meats/29498-satay-saus… Pizza Dough Recipe (from my mother-in-law) - one of my very favourites! Has a lovely flavour, and creates a wonderfully delicate base, that doesn't infringe upon the flavours of the toppings.
