Ingredients
400 ml coconut milk (1 can)
8 eggs
1 tbsp melted butter (for batter)
1 tbsp vegetable oil (for pan)
400 g Tapioca starch (1 pack)
1 tbsp rice flour
1.5 cups sugar
14 g baking powder
1 tsp vanilla extract
1 tsp pandan extract (extra 1 tsp optional)
Instructions
Grease the inside of pan with vegetable oil and place in oven and preheat to 350F
In sauce pan on low heat, whisk together coconut milk and sugar until dissolved, set aside to cool
In a bowl, gently whisk together eggs, then coconut milk and sugar (make sure it's warn, not hot)
In a separate bowl, gently sift in tapioca starch, rice flour and baking power
Add in pandan, vanilla extract and melted butter
Using a strainer, strain batter in bow (2x)
Remove pot from oven put in batter
Bake on middle rack for 50 minutes (do not open oven)
Remove and cool upside down for 30 minutes
Remove from tray and enjoy
