Bakery style sausage buns but made into squids.  

Ingredients:
270g all purpose flour
43 sugar
pinch of salt
5g instant yeast
1/2 egg
54g milk
25g butter
1tbsp milk powder
roux: 20g flour + 100g milk or water
6 sausages

1. Make the roux in advance. Put 20g flour and 100g milk in a pot. Continuously stir over low heat until it thickens. Transfer to a bowl and cover with cling film directly on top of the roux to prevent a crust from forming. Let it cool before using. Alternatively, make in advance and leave it in fridge until ready to use.
2. Toss the rest of the ingredients (except the butter) in a bowl and knead. When it comes together, add the butter and knead again until it passes the window pane test.
3. Let it rest 1 hour or until it doubles in size
4. While waiting, boil sausages.
5. Divide the dough into 6 pieces
6. Shape the dough and let it rest another hour
7. brush with egg yolk and bake for 15-18minutes at 325F
8. Let it cool then cut the sausage into strips and draw eyes using melted chocolate
