MONDAY

DEHLI KI ANDAY AUR SABZIYON KI BIRYANI

Ingredients

Rice     ½ kg boiled
Garlic paste    1 tbsp
Ginger julienne   1 tbsp
Onion chopped   1 ½ cup
Peas boiled    ¾ cup
Potatoes    2 cut into medium pcs
Carrot    2 cut into ½ inch pcs
Chili powder   1 ½ tsp
Green chilies   4 slit
Green cardamoms  4
Cloves    4
Cinnamon    1 inch pcs
Bay leaf    1
Tomatoes    2 chopped
Hard boiled eggs   4
Saffron    ½ tsp soaked in 1/3 cup milk
Clarified butter   2 tbsp heaped
Oil     ½ cup
Salt     1 tbsp
Turmeric    ½ tsp
Coriander powder   1 ½ tsp

METHOD

Heat oil, add chopped onion, fry for 5 mins, add garlic paste, ginger julienne, chopperised tomatoes, fry, add vegetables, chili powder, green chilies, whole spices, salt, fry for 5 mins, add 1 cup water, cover and cook till veggies tender, add the boiled rice over the veggies mixture, top with boiled eggs, ghee, saffron milk, cook covered for 10 mins till done, mix and serve hot.


TANDOORI BOTI SHASHLIK

Ingredients

Undercut boti       1 kg
Tomato cut into square cubes (seeds removed) 2
Capsicum cut into square cubes (seeds removed) 2
Onion        2 cut into square cubes
Raw papaya        1 tbsp
Ginger garlic paste      1 tbsp
Red chili paste       2 tbsp
Salt         1 ½ tsp
Allspice        1 tsp
Vinegar        2 tbsp
Oil         ¼ cup
Hung curd        ¾ cup
Dried fenugreek leaves crushed    1 tsp
Lemon juice        2 tbsp
Melted butter       ¼ cup
Coal        1

METHOD

Wash and dry undercut boti, cut veggies into square cubes, marinate boties with all the given ingredients for 2 hours, put botties and vegetables on skewers alternating, roast in an oven for 15 mins, give dum of coal, brush with melted butter, serve with salad and chutney.











ORIENTAL CHICKEN SALAD

Ingredients for Marinade

Garlic paste    1 tsp
Oyster sauce   2 tbsp
Black pepper   ½ tsp
Salt     ½ tsp
Chicken breast   1 (250 gm)
Oil     1 tbsp

Ingredients for Dressing

Ginger grated     1 tsp
Garlic very finely chopped   1 tsp
Lemon juice      2 tbsp
Brown sugar     1 tbsp
Vinegar      1 tbsp
Fresh red chili very finely chopped  1
Soy sauce      1 tbsp

Ingredients for Salad

Rice vermicelli noodles    1 cup
French greens     2 inch lengthwise
Boiled cabbage finely sliced   1 cup
Carrot      1 julienne
Cucumber      1 julienne
Red bell pepper     1 julienne
Coriander leaves     few
Salted peanuts few roughly chopped  for garnish
Cream cheese    2 tbsp

METHOD

Marinate boneless chicken cubes with garlic paste, oyster sauce, black pepper and salt, leave it for 30 mins. Heat oil, add marinated chicken, fry on both sides till done, remove and leave it to cool, mix all the dressing ingredients together, keep aside. In a bowl, put the noodles cover with boiling water, soak for 5 mins, drain the noodles and keep aide. In a large bowl, add chicken cubes, rice noodles, and remaining salad ingredients, mix well, drizzle the dressing ingredients on top, garnish with peanuts and serve.
