DESCRIPTION:

Sweet and sour bitter gourd pickle is a delicious Indian recipe served as a side dish.

INGREDIENTS:

Bitter gourd    3 nos
Oil    ½ cup
Mustard seeds     ½ tsp
Cumin seeds     ½ tsp
Curry leaves    2 spring
Ginger garlic paste    1 tbs
Turmeric powder    ¼  tsp
Red chilly powder    1 tbs
Salt    To taste
Fenugreek powder    ½ tsp
Cumin powder   ½ tsp
Mustard powder   1 tbs
Roasted sesame seeds powder    ½ tbs

METHOD:

1. Slightly remove peel of bitter gourd and cut into round slices.

2. Heat oil in a pan and add bitter gourd and saute it, later remove into a plate.

3. In the same oil add mustard seeds, cumin seeds, curry leaves, ginger garlic paste, turmeric powder and cook it with lid on it.

4. Switch off flame and allow it rest for 5 mins.

5. Add red chilly powder,  salt, fenugreek powder, cumin powder, mustard powder, fried bitter gourd, little lime juice, roasted sesame seeds powder, little oil and mix it.

6. Transfer into glass jar and keep aside for 3 days.

7. Now karela pickle is ready to serve with rice.
