Suuuper creamy, easy to make and vegan pumpkin ravioli! Learn how to make vegan homemade pasta filled with pumpkin and leeks.
The bright yellow color is due to the pumpkin present in the dough itself! Given it a try and let me know your thoughts 🧡
Ingredients for about 26 ravioli
Ingredients for pasta dough:
200g flour
100g semolina flour
200g cooked pumpkin
pinch of salt
Ingredients for filling:
400g raw pumpkin
2 small leeks (or 150g onions)
2 or 3 garlic cloves
3 tbsp nutritional yeast
olive oil, salt & pepper
Sauce:
some walnuts
3 sage leaves
soy cream
fresh parsley and extra walnuts as toppings
