Enjoy my recipe for Tomasini: a delicious ricotta and sausage filled pastry. The full recipe can be found in my cookbook, Sicilian Feasts, but the ingredients can be found below, as always. If you make these yourself, don't forget to send me your creations! Ingredients: Dough 3 cups all purpose flour 1/2 cup of water 1 teaspoon salt 1/2 cup Shortening (Crisco, or Lard, one or the other or half of each) 2 eggs + 1 beaten egg to brush on top of the Tomasini before baking 1/4 cup water Filling 1 to 1 1/2 lbs ricotta 1 to 1 1/2 lbs Italian sweet sausage Place the finished Tomasini in a non stick baking pan or cover the pan with a sheet of parchment paper. Bake at 400 degrees for approximately 40 minutes.
