This is the moistest, most delicious crumble cake with currants, apples and without yeast that I know! It is super moist, very crispy, easy to prepare and keeps fresh for a long time. It's also easy to freeze and eat by the slice! It's also great with other berries and fruit, or even without everything! 🍰👌🏻

Ingredients for one baking tray
▶️ For the cake batter (all ingredients should be at room temperature):
250 g soft butter
200 g sugar
2 tsp vanilla sugar
1 tsp vanilla paste
juice and zest of one lemon
5 eggs (size L)
350 g flour
2 tsp baking powder
1 pinch of salt
▶️ For the fruit and/or berry topping:
optional: juice of grated lemon (especially useful with apples)
500 g (red) currants
500 g tart apples
▶️▶️ Tip: The fruit can be mixed in any way you like! You can also use just berries, a berry mix, or just apples, plums, apricots, peaches or whatever you have as a topping!
▶️ For the crumble:
250 g flour
150 g cold butter, in pieces
120 g sugar
1 tsp vanilla paste (or vanilla sugar)
▶️ Decoration:
some icing sugar or freshly whipped cream
