Join us as we walk you through how to brew a delicious Pumpkin Beer!
While I have always been cautious of pumpkin beers, it is hard to deny that, when done right, it is a wonderful fall beer. The style varies extensively in color, flavor, and just about every other way, but today I will walk you through how I brew my pumpkin beer. Using a light amber base beer, we are able to produce a wonderful mix of bready, toasty maltiness, and a pleasant accompanying pumpkin pie character.
Follow along with us as we walk you through our ingredients, including the malts, hops, water profile, and yeast strain. We will also show you our process, including the mashing profile, mash out, sparging, the boil, the whirlpool, knockout, the fermentation profile, and last but not least, the taste test.
Our recipe is below. I have included suggested percentages where applicable, as well as values for a 5-gallon batch.
Grains
Maris Otter (60% - 70%) - 5 lbs 8 oz
Munich Malt (15% - 20%) - 1 lb 8 oz
Victory (5% - 7%) - 8 oz
Caramel Munich III (5%) - 6.4 oz
Chocolate Malt (0.5% - 1%) - 0.8 oz
Hops/Miscellaneous
Magnum (12% AA) - 0.4 oz (17 IBUs)
Prepared Pie Pumpkin - 5 lbs
Brown Sugar - 8 oz
Cinnamon - 3.5 tsp
Nutmeg - 3/4 tsp
Ginger - 3/4 tsp
Yeast
English Ale Yeast - WLP002
Water
50 ppm Calcium
10 ppm Sodium
60 ppm Sulfate
70 ppm Chloride

The gold medal is from the Great American Beer Festival and was awarded to Barley Naked Brewing Company in 2023 for the Rockhill Irish Red in the Irish Red Ale Category.
