Daniel’s recipe for cooking “Shiro” – Chickpea Sauce
List of Ingredients in order of use:
1. Onion, chopped
2. Sunflower oil,
3. Tomato, chopped
4. Ethiopian pepper powder ( a mixture of cardamom, basil, cumin, ginger,
Ajowa seed, rosemary, garlic, cinnamon, clove, onion and rue seed)
5. Smashed garlic,
6. Boiled water,
7. Chickpea powder ( already mixed with cardamom, basil, Ajwan seed and
black pepper)
8. Purified butter ( already boiled with cardamom, turmeric and basil)
9. Salt.
Preparation:
1. First and foremost, wash your utensils including but not limited to bowl,
knife, spoon and others.
2. Then, before starting cooking, make sure that you wash your hands using
soap.
3. Heat a pot on the fire (using electricity or charcoal).
4. Add the chopped onion and stir until it turns brown. This idea of adding
chopped onion before the sunflower oil seems strange; however it is proofed
that it gives the sauce a special good taste at the end.
5. Once the onion is brown, add the sunflower oil and cook it for a while.
6. Then, add the chopped tomato,
7. When cooked, add pepper power and stir it for about 5-10 minutes. It should
be well cooked at this point to avoid the burning at the end. This stage is the
base for most Ethiopian sauces including the hottest and spicy chicken sauce.
8. Add garlic,
9. Add boiled water based on the number of people sharing the meal and make
sure the mixture comes to a full boil.
10. Add the chickpea powder. At this point you have to make sure that you stir
it well to control the thickness of the sauce.
11. Add salt to taste.
12. Finally, add purified butter and after few minutes you are done with the
cooking.

Important Note:
 We don’t use measurements of any kind for the ingredients. However,
the following could give you clue about the amount of ingredients
used. For instance for a group of three sharing a meal, you could use:
 2 pieces of onion,
 3 spoons of sunflower oil,
 2 pieces of tomato,
 2 spoons of pepper,
 1 spoon of garlic; and
 1 spoon of purified butter.

“Injera” Preparation

Ingredients:
The major ingredient here is Teff – a very fine cereal grown in Ethiopia. The
cereal is bought from the market and taken to the grinding mill to be ground
into flour.

1. Mix teff flour with water and yeast and let it rest for 2 – 3
days.
2. Spread the dough like a pancake and bake in a clay oven. In
the countryside and culturally we bake injera on a clay
material using firewood underneath. However, in cities today
we use electricity oven to cook injera.
Traditional Coffee Ceremony

The steps:
 We buy green coffee bean from the market or small shops,
 Set up the arrangements including cleaning cups and its saucer, fresh grass,
incense and its burner, charcoal and its burner.
 Wash the green coffee bean,
 Roast the beans it over the prepared charcoal until it turns bark brown,
 Grind the beans after they cool,
 While it cools, boil water on the charcoal,
 Add ground coffee powder into the coffee pot and the already boiled water at
the same time and boil.
 Once boiled, take it off the fire and keep it for a while so that it settles.
 Finally you can enjoy your coffee – Ethiopia’s number 1 gift to the rest of the
world. Remember, Ethiopia is the birth place of coffee Arabica.
Important Note:
 The entire process takes over 2 hours and it has a significant social value as
people get together and discuss different issues while making and having
coffee.
