Growing Pistachio Nut Trees

Here I am, again, checking out my pistachio nut trees. If we get them as soon as they ripen, the nuts have green flesh, like an avocado, with a rather milky--should I say buttery?--texture. I heard that they are starting to sell green pistachio nuts, in that green and milky stage, in the specialist fruit shops in Sydney.
