Rouille

The term “rouille” means many different things to many different people, most of which are probably legitimate. This paste, condiment or mayonnaise has a preparation history that far exceeds any French claims of origin. Throughout history (3-4 hundred years that we know of) it has been made as a straight up flavored mayonnaise, a spicy vegetable puree, a spicy wet bread crumb mixtums to have been working very well for those who have eaten it.
