Rhodes - Typical Dishes from the Greek Island

Easter is the most celebrated time of year on the Greek island of Rhodes. In the town of Archangelos the festival and all its traditions are upheld. Germanos and Tsabika Polichronis are fishermen, they keep goats, chickens and olive trees. During lent, Tsabika cooks vegetables and fresh fish. For the Easter celebration she prepares the Easter pastry and the festive meal Rifki – slow roast goat.
